I have read here that the graphics card is really important for successful operation of vMix. I am looking at a new old stock laptop that has a NVIDIA Quadro K3000M card.

I would appreciate your thoughts.

BTW, the processor is an i7 3740QM

AFAIK, vMix takes advantage of "Gaming" technology and why the GeForce line of cards are recommended.
Although the Quadro line of cards are high end "professional" cards, they are not known for great performance in high end gaming, so I would look into how that card benchmarks in that environment and not just in the business environment it is designed for.
Just my thoughts.

Any of the following i would recommend

NVIDIA GeForce GTX 860 to 1080.

All depends on your budget... But the newer cards support H265/HEVC...
