Currently a couple of my camera inputs come in with embedded audio. I split this so I can control both separately. However there is only currently an option to setup a shortcut to fade the volume on the entire input. It would be good to be able to extend this feature so that when split both channels can be faded by a shortcut independently from each other.

If you have split the channels in vMix then you should be able to use the following shortcuts:

SetVolumeChannel1
SetVolumeChannel2

Yes that is correct and how I am currently setup, however they are hard audio cut, not a smooth faded transition. As we work in loud environments, sometimes we are going from a loud background audio source to a quiet spoken one. In these instances, it would be handy to have them cross fade etc.
