Goal: To stream to one service starting at a particular time (ie 10:15 am). Then start streaming to YouTube at a later time (ie 10:45 am).

Once we start streaming our church service, I want to stream the sermon portion to Youtube which will be a later time. Does anyone have a solution for starting the youtube stream at that specific time without stopping the current live stream?

vMix video output can be used in different streaming encoders, even within one computer with sufficient power.

From vMix, you can start the stream to one channel, with a standalone Adobe Flash Media Live Encoder into anorher, and perhaps with OBS to a third service. This will require a considerable grunt from the computer and sufficient outbound bandwidth.

Thanks! I will give that a try. I have the power and the bandwidth :)

We use restream.io for this.

In order to do this however, you will need to cut your livestream for a few seconds every time when you add another channel to stream to. But in my opinion it's the best option, since it doesn't require additional recourses and bandwidth.
