I noticed that Vmix deposited the app in my documents folder not in the C:

Its a big file not a shortcut so I dare not touch it, but would not like it in my documents folder...
Why does it do this? Can I delete or move this?

You are seeing the previous version(s) installer after an update. That way if you have issues after an update, you can always re-install a previous version. You can move it anywhere you like, or delete it if you're sure you don't want to go back.
