What Codec are you using under FFMPEG? The MP4 NVENC AAC codec uses the GPU. The others seem to use only the CPU. I didn't try all of them, but the one I tried did use the CPU and not the GPU.

Simple Answer [Conclusion]
When you encode 4K video you must make sure that Hardware encoding is enabled and working. You should never encode 4k video on the CPU.

Pro Res uses CPU, try H264 if you want to use GPU instead

Some good hints in this thread already. Here are my two cents.

Enable High Performance Input Mode in settings.
Make sure to not Encode more than 3 times with your GPU. (Usually thats enough. 1x Recording Cleanfeed 1x Record Dirty 1x Stream for example)

Your GPU has a turing chip that supports up to 3 encodes with its SoC NVENC.

NVENC only supports h264 and h265. Prores will use FFMPEG Encoding on your CPU.

Your system should easily handle your load.
