I'm thinking build a pc with all chosen components to run vmix. The goal is not going to cheap and not overkill.
I have a pc built for video and timelapse, so I have the GTX 1080 TI.

Do you think such card is overkill for Vmix, and if yes, what alternative (cost/quality) could be acceptable ?

But can vmix use more than 1 nvenc stream?
I think vmix can use only 1 nvenc accelerated stream. (rtmp output stream).
