I am wondering if there is some way I can use the streaming output of an encoder as input source in vMix.

I will be using a Pixellot camera with 4 video outputs via CAT6A cable to 4 capture cards in an HP workstation.

The software, a form of ViPR, will stitch the 4 videos and produce a stream which is sent to the CDN.

Is there any workaround that would allow me to get the video feed from one of those CAT6A cables or preferably the output of the encoder in that computer.

Probably. We need details about the encoder and the CDN and anything else you can give.

Unfortunately both the camera and the HP Z workstation (with the encoder) do not arrive until late next week. No details available as of yet.

I was wondering if employed the "Streaming" input option in vMix, using the IP address of the HP workstation as the URL ?
