I keep seeing all these pretty elaborate setups for Zoom in/out of Vmix.

My setup:

To Zoom: External out to AJA UTap to Zoom computer as zoom input.

To Vmix: NDI Input screen capture with Vmix desktop capture. No particular audio change.

I tested and so far everything seems to work without feed back between vmix call and Zoom call.

Am I missing something that might bite me at some point??

Good for you Vince, I'm glad this 'easy' approach is working for you. I'm trying the same kind of setup and I can bring in the Zoom video but no audio comes in. What are your audio settings?

I forgot, you also need to install virtual audio cable on the Zoom machine. https://www.vb-audio.com/Cable/

That should be it.
