Is there any way we can effectively INVERT the mask created by the chroma key so that in essence we could fill the "non green" area instead of the other way around?

No, but you can take a screen shot and do so in photoshop.

This may be possible with a big workaround but before I try it would shooting the foreground as a black silhouette ie no foreground lighting to create a matte work for what you want ?
An invert button on the keyers would be useful.

I've occasionally wished that a matte invert was available. It's not practical to Photoshop something that isn't a still image. Very tedious to create an inverted matte for an existing video file.
