Sometimes I record multi-camera remote interviews, would be great to be able to record each VMix call input as a Multi-corder source.

+1. In fact, it seems like the multi-corder is rather constrained in it's application. AFAIK, it only works with hard inputs like capture cards. It would be great if it worked with a more diverse set of sources.

That was just added in vmix 20. The extra outputs can be configured as any input, in turn you can record these in both multicorder and replay.

I'm getting more and more requests for this from producers that need to record just their vMix Call guests in case they need to do any post editing.

Could you accomplish the same thing with 2 vMix machines and NDI? I was thinking that NDI sources are available to the multicorder. If not, the free version of Newtek's Isocorder could work as well. I know it's not quite the same thing as the original request but it should work.
