I know enough technical stuff to know how much I don't know! My current i7 laptop is old so I am shopping for a replacement.

There is so much info on the vMix forums that it would take weeks to read/comprehend it all.

I want to use vMix basic for two cameras and maybe an additional USB3.0 document camera. I use Magewell adapters to convert SDI to USB3.0. Everything goes through a powered USB3.0 hub.

I do not stream now but maybe down the road.

What are the minimum recommendations for the processor and graphics card. If someone would recommend a laptop or portable
computer I really would appreciate it!

Exactly how old is your laptop? You just might be able get by with it for the time being while you do more research.
In a lot of ways, it comes down to what your overall needs are and what your budget is.
vMix has just started listing "Reference" systems on their web site which give a general idea of what is basically needed for average/typical use, and as for laptops, it would appear the gaming line of products is recommended:

How many USB 3.0 ports do you have? ASUS online specs list 1.

Only one USB 3.0 port. I use a powered USB 3.0 hub.

USB 3.0 has total bandwidth of 5Gbps. A single HD-SDI feed at 720p or 1080i is 1.5Gbps and a 3G-SDI feed of 1080p is 3Gbps. If using 720p or 1080i, you might get all 3 cameras to work on your current setup. The only way to know for sure is to test it, but don't be disappointed if it doesn't work.

Just to clarify, I think the units given should be Gbps instead of Mbps.

It's pretty common to say that USB3.0 has the bandwidth of 5 Gbps.

Look for something like this:

USB 3 Ports 2 or more + Thunderbolt 3 = Good, because you can add more USB 3 (with a thunderbolt 3 dock) or Thunderbolt Capture devices.

512GB SSD = Nice

NVIDIA GTX 1060 = Awesome

Brand = Doesn't matter a great deal to me they all source parts from Intel, Foxconn and friends so cheaper = lower quality fittings generally.

I bought a MSI laptop that meets all the criteria. Big sucker but not too heavy.
