Well...
What about your camera input settings. What is the setting for Camera Settings -> General -> Aspect Ratio?
What is the setting for Settings -> Display -> Aspect Ratio?

Looking at your YT videos, there is definitely a fly in the ointment.
Share about your camera(s). Brand. Model. Resolution options. Frame rate options. What resolution and frame rate is/are they set to? Just wondering if maybe the camera is sending a different resolution (like 640x480).

@ ASLNTV
Looks to me like the camera "Normal" is SD 640x480 (or possibly 720x576) and you are stretching it by setting your "Output" to 640x360 in vMix, if I understand you correctly that it is being stretched in your "Output" window. It would also appear that YouTube is receiving an SD 4:3 signal with the stretched image. So, as Tom suggests, you may have to provide more info from top to bottom from cameras and input settings to output and streaming settings to get to the bottom of your issue.

I'm just using Logitech webcameras, the 270 models. I will double check that the output resolution is the same as my cameras. Pretty sure they are.
