Hey, there aren't any timer titles in the vMix 12 pack. What happened to them?

My guess is that since any text field can be set up as a timer, it is a somewhat redundant title category. (I don't know why the tab is still there)
And to boot, with the title designer you can make your own custom title overlays to accommodate your specific needs.

So if I bring my clock design over, how do I get the time to just display minutes and seconds instead of the full complement?

You have to select "mm:ss" in the dropdown timer-menu instead of "hh:mm:ss"

, but here is the next problem. I want to set the timer field on the homemade template and control it with shortcuts. How do I expedite that module?

Firstly you have to open the Settings and then the "Shortcuts"-Tab. There you create a new shortcut and select a key for the action. After that you select in the "Function"-dropdown "StartCountdown", "PauseCountdown" or whatever you want to do by pressing that key. As Input you set your title and as "text" you choose normally "title" or "message" (the text field, your countdown is in)

Ok. Did that. However, it still shows hh:mm:ss in the field. How do I show just mm:ss?

You set this in the countdown settings. (right-click on the titles input window, "title editor", then click on the "settings" button next to the play/pause/stop buttons. So you get into the countdown settings.) There is a dropdown called "display format". There you select mm:ss
