Can a button press control a parameter over time?

I have been looking for a way to control a parameter of an input over a set period of time.
1. I have a Korg Nano, which I use to fade audio levels with the sliders. I would also like to have an upper limit set as well as a lower limit set, which I can select via the buttons next to each slider. Example: Commentary audio Mic 1, when ready to go live, rather than press the upper limit button and have audio volume go immediately to 100%, is there a way to ramp up to that predetermined level over a few seconds as if the slider is being manipulated manually?
2. I have an element of my time clock that slides in to view from top to bottom as it enters the screen. As it is a video file, when the time clock expires it slides back up and out of view. Is there a way to adjust the "Y" axis over time so even if the video does not reach the end (some bouts are stopped early) I can have the video slide back up over the course of a few seconds out of view at the press of a button?
