Could someone please explain the various video formats listed for "cameras?"

It's unclear to me when it might be necessary or advantageous to specify something other than default encoding. Or in the case of webcams, how I might use these options to manage the use of the USB buss.

I already know that the only way to get 1080p30 from a Microsoft LifeCam Studio is to select MJPEG encoding.
