Replacing my AMD GPU

Hey ya'll. I'm gonna yap a bit about my use case to see if I can get some input.
tl;dr I want to replace my 7900GRE with an appropriately powerful nvidia card for my use case
Relevant Hardware Specs: CPU: 5700x3D RAM: 32GB @ 3000mhz GPU: 7900 GRE
I upgraded my aging 1080ti to an AMD 7900 GRE last year before I was using vmix this heavily and before I knew how important nvidia was for vmix compatibility. I guess I've been getting away with murder with my current production and this GPU. I normally produce a podcast with 2-5 remote talent/guests via VDO ninja (into vmix via browser sources) mixed with some local browser sources, etc. Recording a 1080p30 output to a hard drive. This isn't too taxing on my current configuration until we get into 3+ guests but I can reduce this workload by setting up vingester/electron capture properly.
When I really run into issues is when we've tried to do live esports costreams. In this case, we want to output 1080p60 to Twitch and ideally also to disk. The setup includes me combining a 1080p60 Twitch feed (occasionally we get a clean SRT feed), with 1-2 remote talent via VDO Ninja, and additional audio from Discord when we have people hanging out. The last time I tried this, I couldn't stream and record on my hardware without redlining my CPU. I suspect that being on a more appropriate nvidia card would handle some of this workload better, but I'd love to be corrected on that. It is possible that I need to consider a CPU upgrade as well. If this is the case, I'll consider slotting a more powerful AM4 chip in to keep this platform going longer.
Looking at current gen nvidia cards, the lowest options without a downgrade in available VRAM is the 5060ti and then the 5070ti. I'm pretty technical and build PC's but I'm a little lost on relevant GPU technologies when it comes to vmix. I assume the extra encoder on the 5070ti would make a difference but I'd love to be better educated on the matter. Previous gen I'd be looking at probably the 4070ti Super or a 4080.
If ya'll were to tell me a 5060ti would be more than enough that'd be great for my wallet, but I also game at 3440x1440p on this machine so I wouldn't mind the excuse to go bigger. Does anyone have any input or can anyone point me to more technical reading so that I can make a more informed decision? Thanks in advance!
EDIT: I do know ideally I wouldn't be producing the show and outputting to twitch from the same computer. I have a 2019 16" mbpro that could handle that part of things if I set up an output to a capture card there. That would take a lot of processing away from the main machine.
