I am planning to do a stream of 2 F1 simulators, they are both using a 49 Inch ultra wide monitors. I am wondering if anyone has tried running vMix desktop capture with such a wide aspect ratio? Can this be done?

The size of the screen doesn't really matter. You can connect a 50qm LED wall if you like. Important is the resolution of the screen. To my knoeledge the NDI screen capture mirrors that resolution. If you add this input to vMix you will get black bars as the width will be scaled to 1920/3840 and the height is usually smaller on wide resolutions when scaled to 16:9.
