Will the AJA Io XT handle two SDI inputs and one HDMI input simultaneously.
Showing me three separate camera inputs in vMix and allowing me to add all three as inputs to the switcher?

Unfortunately, I don't think so. I believe the device is only two channel so the HDMI port is shared with one of the SDI ports (similar to the Io X3).
Also note that the device is discontinued, so support for it may be questionable.

IceStream is correct. I have been using an AJA I/O XT for several years in one of my streaming kits. Input 1 can be SDI or HDMI and Input 2 is SDI. The I/O XT is still listed on the Supported Hardware page

Though I haven't tried it with vMix 26.
