I work for an AV company that is looking to have easily portable vMix setups.

We've thought of a solution having an Elgato Cam Link Pro with 4 HDMIs plugged into a thunderbolt 3/4 PCIe expansion - In theory we think this would work.

Just in case however I'm trying to figure out another way but hit a brick wall. Anyone know another way to get 4 HDMI inputs into a portable solution into a vMix laptop?

I agree with MartLeib.

The only way to get raw content (SDI, HDMI) into vMix is through USB or through PCIe. USB wouldn't have the bandwidth for 4 HDMI feeds so you're left with PCIe.
TB is essentially PCIe under the hood which is why it's a natural shoo-in for this setup. Technically if you had an m.2 M slot on your laptop and didn't mind the case being off you could bring PCIe outside to a physical riser (this would be necessary in the case of an AMD processor as until 2 years ago Intel was still charging a lot for Thunderbolt licensing so practically no manufacturers added TB support for an AMD chip.)
