Our 4K vMix install was done with NDI 4. NDI has now come out with version 5. Should we upgrade NDI on our system?

That is up to you.
Essentially, most of the NDI 5 "improvements" are about the new Tools for Bridge and Remote + are backwards compatible, so it doesn't affect vMix 24 so much.
vMix 25 is updated to NDI 5, the Beta Preview is available now and I expect the official release will be in and around NAB in April if not sooner.
