the mid-side recording technique requires inverting polarity on one audio input to help cancel out phasing problems. I can't find an option to invert polarity on an input. Is it possible?

vMix supports VST 3 audio plugins. There's probably a plugin for that.

Is this a physical input to a USB audio device?
Is it a single input or half of a stereo pair?
