What are the professional solutions for adding 20-30 callers to the vMix production?
Zoom and Teams integrations are rather tinkered solutions. Are there solutions that have "better" NDI support or better integration capabilities in vMix?

Fiber optic network is given with me alone because of the NDI devices.

But I think I really have to fall back on MS Teams and integrate this via NDI.

I have not measured it yet, but I am pretty sure each vMix Call does not use full NDI Bandwidth.

Other question: do you really need 20-30 callers talking at the same time?
Else: what is the maximum you need at te same time.

You can work around with closing and appending Calls on two (or more) vMix machines.

If you really need 30 callers at the same time you can will need 4 vMix machines.

Also: I dont want to give away every production secret but you can get 8 Full HD calls out of one machine via SDI with a bit of scaling.
