What is the best way to get sound from our church's sound board into our computer, and finally vmix? Thanks for your help in advance!

There is no "best way", too many variables.
One of the simple ways is to use an AUX output on your mixer and feed this to the line input of your computer.

I'm going to suggest the chance of ground loop is high, in that case you could use a DI box?

Hallo,

(50) The CD/TAPE OUTPUT RCA connectors provide the stereo main mix signal to a tape deck or DAT recorder to record your mix. The signal is taken pre-fader, so that it will not be influenced by the fader positions.

Then input into PC with RCA to jack adapter cable. vMix input audio.
