Hello, I want to know if it is possible to connect two or three captors of Elgato in a Thunderbolt 3 dock. I have three other URAY capturers for USB 3.0 and they work very well.

Maybe. The details matter.
You haven't said which mode El Gato product. Some of their devices require a driver. If the one you choose needs a driver you may find that the driver only allows one to be used.
If it's a UVC class device, with no specific driver, this is not an issue.
Also, you haven't specified resolution. I'm not sure how much USB 3 bandwidth is available via a TB dock. If there's just one USB 3 channel you may find that you can't use more than one USB3 capture device. Especially at 1080p60 or beyond.
Remember that USB is only rated for 5 Gbps, but in reality delivers around 3.5 Gbps reliably. That's enough for one 1080p60 YUY2 stream.

I´m thinking in Elgato Camlink 4k, but only need 1080 - 50p

Does not work here, only 720 input with 2 camlinks 4k. Try to connect 1 per USB3 and the second one with adapter per Thunderbold. This way works for me with 2 4k inputs, but there is high latency (about 180ms). Greets Martin
