Hi, I have to do a vmix project, I need to record without some overlays, but streaming and external with all overlays, how can I do? thank you

In the 4k and Pro editions there is an optional second recorder.
In that recorder you can choose its source from Output 1 through Output 4, as configured in the Settings Output/NDI section (where you can determine which, if any, overlays are included in the output).
I don't know if it's possible in the lower editions.
Look in the User Guide file under Recording > Second recorder
