I have a question about my system, currently I am running:

i7 7700k
Gigabyte Aorus Z270 Gaming 5
250gb SSD
1TB SSD
32GB RAM
MSI GTX 1060
Blackmagic Decklink Quad 2

I am looking to add a second Decklink Quad 2 to expand my input to 16 (realistically running 14 input 2 output) on this system. I'm a little concerned about the load on this PC. Is it feasible to be able to add this to the above mentioned system or will I run into issues?

I think you will have PCIe Lane problems, i.e. not enough lanes for Graphics and two Quad 2.

try this board, it has dual thunderbolt 3 and it has a plex chip to give you more lanes. https://www.asrock.com/m...uperCarrier/index.us.asp

should work.
