There is a big bug in record settings.

The Vmix delete all previous files with this file name format {0} - {1:yyMMdd}

If you start recording many times only the last files are on the disk.

That is not a bug but a user error as now each file has the same exact name (Name-210906.ext) and as such overwrites the previous one unless you wait till the next day for another recording
Should keep the time in the name addition if you dont want this to happen or use another name in the recording settings before recording
It is even intentional that vMix does not ask if you want to override the previous file

This is a BUG.
The user can delete the recording without warning. It's normal???

If you split filer every 10 minutes, there isn't a problem with overwrite.

Because in this case vMix adds an extra incremental number as it is one continuous process .
But there is still the same problem in your case ! Stop your recording and start again and your files will again be overwritten without using a timestamp despite the added numbers ( starts from 0 again)

The best way to differentiate individual recordings is to use a timestamp added to the file , the more details ( seconds) the less change you have of same named files
Use the time in your setup name as it is initially done!
You did removed that hence no unique naming anymore hence overwrite

BTW: Ever since you joined this forum in 2013 (and i assume using vMix) it has been this way !

Is it normal to delete files without asking?

Its not deleting them , its overwriting them under the same name as per your instruction (settings), and for vMix recording the answer is yes (some do that even on purpose).

If one still feels this is a bug one can notify it here https://www.vmix.com/contact-us.aspx
