I noticed that Geforce is on the recommended hardware lists and reference systems but I've seen some mentions of the Quadro cards having unlimited encoding sessions.
Does this make them better?

Geforce cards are also pretty hard to find now-a-days.

If you could pick any high end card would you use a Quadro? Which one?
Not including those super extreme rare cards.

The best way to evaluate NVIDIA GPUs effectiveness with vMix and/or Quadro vs GeForce is by the number of CUDA cores.
Yes, GeForce cards have an imposed limit of to up to 3 NVENC encodes, whereas Quadro cards do not have that restriction but will still limited by the card's overall capabilities, so not exactly "unlimited" as the cards performance will deteriorate progressively with each added encode.

So the Quadro RTX 6000 has 4608 CUDA cores which is more than the diamond reference system RTX 2080 Ti (4352)

So would you say that the RTX 6000 is better due to higher CUDA cores and unrestricted Nvenc sessions?

Technically, yes, the RTX 6000 is better than the RTX 2080 Ti.
Are you going to notice the performance differences in vMix? Probably not.
The GeForce RTX 2080 Ti is about as good as it gets for most things vMix in the sense that it will pretty much handle everything that vMix can throw at it and as such, is good value, dollar for dollar when compared to "better" cards at twice the price.
If you need those extra NVENC encodes of a Quadro card and can justify the expense, then go for it, but you are unlikely to see or notice any performance differences with vMix between the two cards in my humble opinion.
