Newbie Question: Does the "Audio Delay" feature allow for an audio input from an external analog source (e.g., PA Aux-line output) to be delayed to compensate for video processing delays?

Yes, this is a very common reason for doing it.

This is in fact covered in one of their tutorials:
vMix Audio Tutorial

Don't be afraid to experiment. Trial and error can get you surprisingly far. vMix's tutorial channel is also very valuable to see concepts in action.
