If I set the Output Size (in settings) to 1920 X 1080 (because that's the size I wish to record the broadcast in) but I stream live at 720p (1280 X 720), would that impact on the bandwidth I use up in the live stream?
Naturally the bitrate of the recordings would be set higher (maybe 8-10 mbps) and the bitrate of the live stream would be set lower - probably 1.5 mbps.

You have separate data rate controls for the stream and local recording. Set each as you like.

The size or resolution of a video has absolutely no impact on the bandwidth used to transport the stream. Only the bitrate matters...
However resolution and bitrate must be set smartly if you want a decent image quality in the end. 720p requires more than 1.5 Mbits to be visually good. (1.5 Mbits is more for a 480p stream)
Check your streaming provider recommendations for best settings
