Is there a way of adding inputs from previous .vmix sessions (e.g. videos) and keeping their settings such and in and out points for videos, triggers etc...

Yes, to some extent.
See the help on Append instead of Open a preset (with the earlier session in it)

Ah, I note that input settings are not carried over, that's a little frustrating!
