It would be great if the shortcuts were sorted alphabetically when the "all" category is selected, and also a search box to quickly find your function if you know what it's called.

Not sure I understand...
Alphabetically according to what?
You can re-name and re-order them to your liking already (I do this all the time, especially when using my iPhone for specific and 'goto' functions).
Altering that pre-set functionality would probably cause me more headaches if I had to re-do it every time.

Perhaps I should have been more clear... the Function to be selected for a shortcut shows this dialog...

You cannot search or sort them, which would be very nice if you could, especially for the "All" group at the top.
