Is it wise to separate NDI camera's from the internet and all other devices and use a 2nd NIC and switch?
Will this improve stability and reduce the latency?

I would recommend a separate NDI video network, however, the main reason for that is so I can have my own control over this network and can configure it as needed. If you have control over the 'main internet' network then this might not be a big issue.

Unless the main network is saturated with traffic, there probably wouldn't be much change in stability and latency will not be affected. With now NDI operates, either the frame arrives in time or it does not.
