I'm trying to decide between two laptops to use mostly for vmix, hoping to be able to stream and record at same time.

One has an i5 7300HQ + GTX1050 and the other has an i7 6700HQ + GTX960M

Personally I'd go with the i7 with the 960

So i have the ASUS ROG (17") and the MSI (15"). Both are i7 but the MSI is 7th generation and the ROG is 2nd generation. I've found the ROG is more efficient in recording and streaming. I think because the laptop is larger and has a better cooling flow. The MSI seems to get sluggish after a while but still acceptable recording and streaming, the CPU tends to be higher on the MSI for some reason. The ROG has the 960 and the MSI has the 1050. Both work great, but for portability, i'm using the MSI. Another benefit of my Asus ROG is that the laptop has 2 drive bays in it.

What 7th generation i7 does the MSI have and which 2 generation i7 is in the ROG?

I like to use https://www.cpubenchmark.net/ to compare the CPU performance.

This makes it easy to determine that my 5th generation i7 (5775c) easily beats the newer i7-6700HQ.

i7-5775C = 11013
i7-6700HQ = 8145
i5-7300HQ = 6848

It's really an unfair comparison since 5775C is a desktop part, and the others for laptops.
