Does anyone know of a method to connect 2 (or maybe more) HDMI cameras and lead them to a single Thunderbolt output for ingesting video into a PC laptop which has just one TB3 port?
Also will vMix recognize the 2 cameras separately?

Use external PCIe Thunderbolt case like the Akitio Thunderbolt2 Expansion box or new models with Thunderbolt3. You can use the Apple THunderbolt3 to Thunderbolt2 adapters which are cheaper then the Windows adapters. Akitio Thunder2 PCIe BoxIt allows you to add a external cards like Blackmagic. I use one with the Blackmagic Decklink Duo2 Quad SDI input card. You would be looking at about $1000-1500 total depending on which card you use. For HDMI there are few different manufactures but the guys could answer that quickly.

So is each camera identified as a separate input by vMix?

I only ask because my current setup (Lenovo W530 laptop) has 3 USB 3.0 ports which I gather are on the same bus - and when I connect 2 cameras to them (via 2 separate Hdmi to USB 3 adaptors) only one camera is recognized by vMix. To connect the 2nd cam I have to connect it via the Hdmi-USB3 device through an ExpressCard USB 3.0 adapter.
The system I am looking to get shortly has only One Thunderbolt 3 port and am wondering if the same thing would happen if multiple cams are connected to a single Hdmi-to-TB device (?)
(Of course it does have separate USB 3.0 ports but that is for adding yet another extra cam, so lets ignore that for this discussion).

Not all USB devices allow multiple devices to be connected at the same time and then be seen as separate devices due to drivers they
have, plus you are limited on the amount of USB due the bandwidth. If the laptop that has TB3 or even TB2 port you will be happy and be able to use more professional hardware just need to get over price hurdle
then should be all good.

So I took your advice and have decided on the Akitio TB3 box with the Blackmagic Intensity Pro 4K pcie card which will allow 2 hdmi cams to be connected to the laptop via TB3.
Then another hdmi connection via the USB 3 port and yet another hdmi cam via an hdmi expresscard adaptor - making 4 cams in total.
I'm not sure if I can daisy-chain another TB3 device to the Akitio box (since it has 2 TB3 ports) but that's for another day.
Thanks for pointing me in the right direction.

Which make/model is that? Think about getting a 4 input HDMI capture device (Magewell, Blackmagic, etc.) to use with your Akitio box.

You're right - the second hdmi port is an output !
The Lenovo Thinkpad P51 has a TB3 port (unfortunately just one) in addition to USB 3.0 ports as well as an ExpressCard slot - which is why I am tending towards it.
I did find a 4-hdmmi-input card (Magewell Pro capture quad) but Ouch! The price - $900 USD!!!

you can use hdmi to sdi adapters also, they work and there about $39 for the blackmajic ones. then pickup a used aja kona 3g on ebay and that will give you 3 1080p 60 sources. or a decklink duo 2 . also i would go with startech thunderbolt 3 to 2 adapter, i have read it is better, i have them, they work great.
