Once you have added a camera as an input, you can then go into the advanced settings and add a delay (in frames), which buffers the video stream into RAM.
Is there anyway this can be updated to include the audio channels?

Audio delay is done in Audio Settings of the Input.
(accessed by either the cog wheel of the Input -> General -> Audio Settings button at right middle of window OR the cog wheel of the Audio Mixer Input)
Hope that is what you are looking for.

Unfortunately the audio delay only holds up to 20000ms (20sec) of data, which unfortunately isn't enough.
Compared to the video which can hold as much as you can allocate RAM.
I'm looking to delay the video and audio at the same time for up to X amount of time (more than 20s)

I'm not sure I understand your purpose completely.
Are you trying to sync mismatched audio and video or simply want to delay a synced feed?
Does the "Video Delay" Input offer a possible solution for you?
(I typically use the Video Delay Input for replay, but it may help to give you what you want)

Ice I would like to delay the audio AND video of an input.  When using this option, the video gets delayed, but the audio continues to play back live. The Audio Delay maxes out at 20s:  I would like the ability to delay both. Hope that clears it up.
