I'm using vmix to drive a billboard type display that just runs a preset content loop. Every couple of days, it will just lockup and crash the whole system. I have to re-boot windows.

Running windows 10 on a Dell laptop with a core i5 and an NVIDA geforce 9xx m dedicated graphics card.

What information do I need to collect to diagnose this? What can I do to figure out why and ultimately make it stop.

You can look into the event viewer if you can find a cause logged before lockup.
You should test the laptop memory with memtest86 or alike.
Run the Prime95 torture test for some hours to check system sanity.
Look at the windows task manager over the days the laptop is running. Is the memory slowly filling up?
Look for heat issues with the graphics card or processor. Laptop ventilation is quite compact so it suffers a lot of dust building up.

How many inputs are you using? How many videos?
