I just downloaded the demo version of vMix (awesome program)and installed it on my I7 laptop. Before I purchase a necessary HDMI to USB 3.0 converter, I have a question.

I need to import a large SD file with date and time already burned into the video and convert it to a MOV file. Then I need to export the MOV file into a flash drive. Is this a practical application for vMix?

This is for a real time video of legal depositions. Currently, I am lugging a DVD recorder with me to record the proceedings but I think the flash drive would be better.

I'm not so sure about MOV file output but you will be able to record as an MP4 file.
If I understand you correctly, you are only needing the software to convert the files for you, which although the end result may be what you require, it is not the primary purpose of the software and there may be other options out there for this specific task.
vMix is a 'Live Video' switcher, which means that your process will be done in real time, that is, you will have to playback and record your original SD file to the format and location you choose, which should work for you, but as indicated there may be other tools out there that will do it in less time for you if that is all you need it to do.
If, on the other hand, I have misunderstood, and you will be recording 'Live', then vMix may very well be a good tool for you.
