With the inclusion of NDI into vMIX, I wonder if the addition of Ethernet port utilization % for the local machine would be of value. Especially if multiple NDI streams are being brought into the PC. Any thoughts?

There are no meaningful data that can be displayed via % port utilization.
If you have a Gigabit port but you are connected to a 100mb switch ports, you would see 10% utilized but the network would be 100% saturated (I'm making up the percentages for the purpose of the example. a network would start failing long before you got to 100% utilization).
Another example would be a vMix 1GB port connected to large switch with 48 1GB port, but the switch is saturated because of huge amounts of traffic from 47 other sources.
There are meaningful data that you can collect from the eth port, but unless you understand exactly what is being polled and why... the data is going to be pretty meaningless.
It's a tricky metric to share with end users. You always run the risk of giving the end user too much information and that leading to confusion and unhappiness.
