I know that the highest frame rate that the vMix settings show is 60 fps, but what does vMix do when a camera is sending 120 fps?

There is no camera that can send 120 fps over SDI and no capture card that supports it. I wish there was one. Super SlowMotion would be a great benefit for instant replays.

yes 4ch x 30fps = 120fps
if I'm not mistaken, the cameras record at more frames but the output is 30 or 25 to get the slow motion efect

It's not actually 120fps per port (or even one port at that frame rate). This is how they describe frame rates on cards primarily designed for security cameras.
They just add up the maximum FPS per port (30) to arrive at that number.

But there are cameras that support 120/100 fps via HDMI, so we just need a capture device for the magic to happen.

6g-SDI standards and up do account for high frame rate cameras, 24g-SDI is even something like 4k/240. So there probably is equipment out there somewhere, but we must be talking special order and tens of thousands of dollars.

By the way for some time there already is a camera that supports 120fps via SDI: https://www.aja.com/en/news/top-stories/272CION enables today’s growing demand for high frame rate support and offers the ability to output 4K raw data at up to 120 fps via 4x 3G-SDI outputs. And then there is the capture card: https://www.aja.com/en/products/kona-4KONA 4 also supports AJA Raw capture at up to 120 fps via 4 3G-SDI connections. The big question is if this is Aja proprietary standard or would the same technological workaround (using several SDI inputs) would be adopted by other manufacturers.
