You iluded to the answer in your question without even realizing it. You simply need a HDMI to RCA adapter. Quick Amazon search found this that should work for you: http://www.amazon.com/Po...ords=hdmi+to+rca+adapter

There are obviously better ways to record but I see you work for a church so I assume you are recording sermons for parishioners who don't have access to newer tech like DVD players or computers.
