Is there a way to assign a keyboard shortcut for the picture in picture zoom?

AFAIK it is not possible. You might have a look at the request for Improved MultiView template management, and add your interest there. (Assuming that you by "PIP" mean a MultiView setup).

ttorrez means the ability to right click the 1,2,3,4 overlay buttons when they are set to Picture In Picture mode so they expand full screen.

I will add the shortcuts to the next update since its easy to add. OvelayInput1Zoom is what the shortcut will be called.

That's fantastic.

2 questions. When is the next updated planned for release and will there ever be an option to add more than 4 overlays? 6 would really hit a sweet spot in my experience. 8 would be stellar.
