It appeared to me that in the output settings you could assign which overlays went with each output. Doesn't seem to be the case.

Is there a relatively simple method to apply different titles to both streams?

The Overlay options in Output settings only apply to the main vMix Program Output, so for example, if you want Overlay 1 to only appear on Output 1 and Overlay 2 to only appear on Output 2, then both Overlays need to be enabled and on screen in vMix and then in Settings, both Outputs need to be set to "Output" and Overlay 2 needs to be disabled on Output 1 and Overlay 1 needs to be disabled on Output 2.

If you are instead sending different content to each Output then those Overlay settings don't apply so you will need to configure things differently and use Mix Inputs with specific Inputs and Overlay channels assigned to them in Shortcuts.
