Should this be enough laptop to run vMix with two 1080p camera's, each coming through one of the USB 3.0 ports (one camera per port).

We're using two of these, once per camera and each on it's own USB 3.0 port.

I had a similar arrangement some years ago. I changed from 1080p60 to 1080p30 to ease the load on the CPU.

The tricky part are the capture devices. A single 1080p60 uncompressed YUY2 stream is about 3 Gbps. That's well within spec for a USB 3 port.

If the USB 3.0 ports are on separate controller channels you could use YUY2 or MJPEG encoding over the USB link. No issues.

If they are in some way bandwidth constrained, or otherwise unreliable, you may be forced to use MJPEG over the USB 3.0 links.
