Have Panasonic PTZ cameras - PTZ controls seem responsive with buttons in input PTZ setup screen, but are very laggy with Logitech and Thrustmaster joysticks, as well as XBox controller. All game controllers seem very responsive in the Windows Game Controllers device properties screen.
Sometimes there's maybe a half-second delay, but as you move the controls more, the delay grows/worsens. Sometimes I release the controls and the cameras keep moving erratically for ~30 seconds - almost like the PTZ commands are being held in a buffer and vMix(?) can't keep up with them.

Anyone have any advice/suggestions for fixing this?

Disable the "Pressure Sensitive Control" setting in the shortcuts for the controller. Never worked well for me, and sometimes it shows exactly the behavior you described. If you leave the speed field empty, the shortcuts reflect the speed setting you made on the PTZ setup screen.
