Currently there is no way to assign a co-host or re-assign host if vMix originates the Zoom meeting.

This is by design, as the recording/streaming permissions are very particular on how the meeting starts.
If you require this sort of control, you will need to start a meeting as host elsewhere, and simply have vMix join instead.
